Here some pics of the big day...Its also my Moms and a family friends Birthday so we do some birthday cakes too....

Getting the Bird prepped, dropping it in the fryer, and the end result!! Thats a juicy turkey!!

Heres the cake Paula made for my Ma's birthday, shes taken up some interest in making fancy cakes here the last few birthdays. And the rest of the food starting to hit the table before dinner.

Could never understand the desire to deep fry a turkey. Nothing like raising your cholesterol levels and killing all good nutritional value of the food. We either bake or grill turkeys.

I believe a big bird like that cannot be deep dry from raw to done, I think it must be baked or broiled or something to have it 85% done first, then maybe fry it in the end to have the final crispy outside... :corn

Nope, they do it raw. Takes about 15-20 minutes thawed. You never want to cook one that's frozen though as it will severely react to the boiling oil.

2 things:

1. Theres no "coating" on the bird when it's deep fried, like with fried chicken, so it doesn't really burn to a crisp. Plus the bird is a huge heat sink; it's pretty resistant to burning like smaller pieces of meat would do.

2. Try smoking the bird for about 1-2 hours, THEN deep frying it until done. One of the best turkeys I've ever had.

And definitley NO FROZEN birds in the deep fryer....thats how people get hurt or burn their houses down using them things. Oh, and thats peanut oil in the fryer, not lard.

Val - The general rule of thumb is 3minutes per pound. Take the fryer to 350 F, then get the temp back up as quick as possible after you put the bird in there and hold it at that.

So I turn the heat to the max after the bird is in there? Wouldn't that be over 350 F? :dunno

No, when you drop the bird in the temp of the oil is going to drop, usually to about 250. You crank the heat to get it back up to 350 as quickly as possible then taper it back off to hold 350. If you have a fancy electric fryer then you dont have to worry about that because the thermostat will do it for you. Mine is a propane fryer with no thermostat.

Far too complicated. It's much easier to:

Dig out Weber grill
Load charcoal on the sides of the grill
Light charcoal
Let sit for 20 minutes
Put turkey in grill and check it every half hour.
